“Roasts often turn out too dry. Here is the recipe for a juicy roasted turkey breast, prepared with apples and wine.”
Ingredients:
ca. 500g turkey breast
3 apples
1 red pepper
5 cherry tomatoes
2 smaller carrots
1 onion
3 garlic cloves
1 teaspoon peppercorns
4 cloves
100ml aromatic dry wine
salt
freshy ground pepper
smoked paprika
olive oil
ca. 500g turkey breast
3 apples
1 red pepper
5 cherry tomatoes
2 smaller carrots
1 onion
3 garlic cloves
1 teaspoon peppercorns
4 cloves
100ml aromatic dry wine
salt
freshy ground pepper
smoked paprika
olive oil
Method:
- Rinse the meat and dry it with a paper towel. Only dry meat will roast nicely.
- Season the meat with salt, smoked paprika and pepper.
- Heat up a bit of olive oil in a non-stick pan, then fry the meat till it’s nicely brown from all sides. Remove from the heat and immediately add all vegetables and apples.
- Pour over with wine, add cloves and peppercorns. Sprinkle a bit of salt over the vegetables.
- Put the pan in a preheated oven at 180°C and roast everything for around 20 minutes, depending on the thickness of the meat.
- Be careful not to overcook the meat, it could become too dry. During the roast, vegetables and apples will release enough liquid to form a good amount of sauce. This will give the meat the moistness, that is often missing in roasts.
