Method:
- Rinse the chicken and dry it with a paper towel. In a cup prepare a mix of lemon salt, pepper and olive oil and massage it well into the chicken.
- Season the cavity and pop in half of the lemon (cut in 2) and half of the tomato.
- Roast the chicken at 160 °C for 1-1½ hour (depending on the size of the chicken).
- If you roast the chicken on a grill rack you don’t need to turn it around, because the hot air circulates around it and the chicken roasts evenly.
- Before you cut the chicken, leave it to rest on the grill rack for around 10 minutes, for the juices to settle. You can use the chicken juice, that drained out during the roast, for a sauce.
- Peel and dice the potatoes. Cook it in salted water.
- When cooked, drain the water and add grated cheese, lemon zest and butter. Mash it well. When cheese melts and the lemon zest develops its aroma, add sour cream, crushed garlic cloves and mash it again.
- For mashed potatoes to be soft, light and creamy, without lumps, squeeze it through the strainer.
