COCONUT CHIPS

"I our house everybody loves the coconut, even our dog Google! The fresh coconut meat is rich with fats, nourishments and high in fibres. Its taste differs from the coconut flour we usually find in grocery stores. It’s definitely worth a bit of an effort to prepare these fresh coconut chips."


​Ingredients:
1 coconut 

How to open a coconut?
  • Find 3 eyes on the coconut – the 3 circles. One eye will be softer than the others. Into the softest one, push through a screwdriver or sharp scissors and make a hole.
  • Drain the coconut water into a bowl or a cup. You can use it for drinking or cooking.
  • Hold the coconut in the palm of your hand. Using a blunt edge of a heavy knife, firmly tap around the equator of the coconut. Keep rotating the coconut in the palm of your hand and tapping on it. It takes 3-4 taps for the coconut to split open.
 
How to remove the coconut meat from the shell?
  • If you want the keep the shell whole and use it for a decoration, then use a knife or a screwdriver to carve the meat from the shell. Cut through the meat all the way to the shell, then stick the screwdriver in the gap between the edge and the meat. Chunks of meat should pop out.
  • If you want bigger chunks of coconut meat, just hit the shell a few times on the outer side with a larger knife. The shell will probably crack, but should also release the meat in one piece.
 
 
Method for Coconut Chips:
  • Remove the inner, softer shell from the coconut meat. Rinse it under cold water and dry it with a paper towel.
  • Grate the coconut meat with a potato peeler into thin strips.
  • Place the strips onto a backing tray lined with backing paper and put it in the oven to dry for 1 hour at 110°C.

How to pick out the right coconut in the store?
 
The coconut must me full of water and therefore quite heavy. Shake the coconut and listen, if you hear the water inside. If not, rather leave it. It’s probably already mouldy inside. Pick out the heaviest coconut you can find.
​The other thing to watch out for are the coconut eyes. They should to be dark and never mouldy.
