"These honey pears, sprinkled with poppy seeds are swimming in a delicious silky smooth cream, full of vanilla, cloves and cinnamon aromas. For an even richer taste, add some Cognac or preferred spices."
Ingredients:
4 pears
300 ml milk
1 egg yolk
1 teaspoon corn starch
2 sorts of white chocolate (or 1 spoon sugar)
5 spoons honey
1 vanilla bean
3 cloves
1 cinnamon stick
4 spoons ground poppy seeds
1 lemon
3 ml Cognac (optional)
4 pears
300 ml milk
1 egg yolk
1 teaspoon corn starch
2 sorts of white chocolate (or 1 spoon sugar)
5 spoons honey
1 vanilla bean
3 cloves
1 cinnamon stick
4 spoons ground poppy seeds
1 lemon
3 ml Cognac (optional)
Method:
- Peel the pears, remove the seeds and drizzle them with lemon.
- Place them on a tray lined with a baking paper and coat them with honey.
- Bake the pears in a preheated oven at 200°C for 20 minutes. During baking, drizzle them a few times with honey.
- Prepare the cream: Measure out 250 ml milk, add cloves, vanilla seeds and the whole bean (cut the vanilla bean lengthways and scrape out the seeds), cinnamon stick and white chocolate. Slowly heat up milk. The spices will have more time to release the aromas.
- In a smaller cup add 50ml milk with corn starch, sugar (or white chocolate) and egg yolk. Mix everything well together well together until smooth.
- When milk starts to boil remove the vanilla bean and cinnamon stick and whisk in the rest of the milk with corn starch. Continue cooking like you would a pudding, until the cream thickens.
- Remove from the heat and let it cool down.
- When the cream is cooled, you can add the Cognac.
- Put some cream on the plate, add the pears and sprinkle them with poppy seeds.
- Serve warm or cold.
