Ingredients:
250g Sauerkraut
2 pair Carniolan Sausages
1 onion
3 garlic cloves
2 bay leaves
1 teaspoon pepper corns
1 heaping teaspoon paprika
½ teaspoon whole cumin
salt
3 potatoes

Method:
- Peel the potatoes, dice them and cook them in salted water.
- Finely dice the onion, salt it and sauté it in splash of olive oil.
- Add sliced Carniolan sausage, stir and cook on. By sautéing, the sausage releases more flavour, than by simply cooking it in water.
- Add finely diced garlic and keep sautéing till it releases its aroma.
- Add paprika, cumin and stir to blend all the flavours.
- Add sauerkraut, bay leaves and pepper corns.
- Pour over with potato water – a water in which the potatoes were cooked. The soup will thicken a bit, because of the starch released from the potatoes. Add just enough to cover everything. If you want a thinner soup, add a bit more.
- Cook the soup covered and on low heat (don’t forget that microelement don’t like high temperatures) a few more minutes, for all the flavours to blend. In last minutes, add the potatoes.
- If you want, now is the time to add a few spoons of sour cream.
