Ingredients for sponge cake:
2 eggs
2 heaping spoons liquid honey
2 spoons dark cocoa
2 spoons corn starch
Ingredients for cream:
150g Mascarpone cheese
100ml whipping cream or double cream
1 spoon honey
1 heaping spoon coconut flour (optional)
To moist the sponge cake:
chocolate milk or teaspoon of honey melted in a bit of milk

150g Mascarpone cheese
100ml whipping cream or double cream

To moist the sponge cake:
chocolate milk or teaspoon of honey melted in a bit of milk
Method:
- Beat the egg whites till stiff.
- Beat the egg yolks with honey till it doubles in size. Lower the mixer speed, then add cocoa and corn starch.
- Add the beaten egg whites.
- Fill the individual pans less than half full, because the dough will rise during baking. (You could make a double batch, fill the pans full and then cut them diagonally to make two slices.)
- Bake the slices in a preheated oven at 180°C around 5-6 minutes.
- While waiting the slices to cool down, prepare the filling.
- Whisk the double cream. At minimum mixing speed add Mascarpone cheese and honey. At this stage, you can also add coconut flour.
- Carefully remove the cooled cake slices from the pan. The slices should be soft and fluffy, like the original ones.
- Moist the slices with chocolate or honey milk, then place 6 of them back in the pan.
- Thickly spread the cream over them and cover with the other slices, facing upside down.
- With the help of a knife or a spatula take the little sandwiches out of the pans and correct the edges with the filling.
- Hide them in the refrigerator, otherwise they'll be gone in a second!
