"These fried Mice are soft and moist, and have a distinct banana-lime flavour. They don’t contain any eggs, and are a perfect solution for the use of too ripe bananas.”
Ingredients:
1 cup flour (200ml)
3 larger ripe bananas
3 spoons coconut sugar (or any other)
vanilla seeds
½ bag baking powder
2 heaping spoons coconut flour
1 bio lime (zest + juice ½ lime)
pinch salt

Method:
- Sift the flour into a bowl. Add baking powder, vanilla seeds, sugar, coconut flour and lime zest. Mix everything with a fork.
- Peel the bananas, cut them into smaller pieces and add them to the flour.
- Add lime juice. With a fork or a hand, mash everything together into a sticky mixture.
- Cover the bowl with a cling film foil and leave it in the refrigerator for ½ an hour.
- If the dough is too runny, just add one extra spoon of flour. The dough should look like in the picture below.
- Scoop up some dough with a spoon. With the help of another spoon form Mice and toss them into hot oil (160°C). Fry them until golden.
- With a skimmer, take the fried Mice out, and first place them into a strainer for oil to strain. Leave them for a minute or two. Then move them onto the paper towels, to soak up any excessive oil left.
