Ingredients for 500ml jar:
cucumbers for a full jar
1/3 jar vinegar
2/3 jar water
1 small teaspoon pickling spices
1 small teaspoon salt
½ teaspoon sugar

Method:
- Thoroughly wash the cucumbers and leave them to dry.
- Larger cucumbers, with small seeds can be cut into slices. Slice them 2 mm thick with a really sharp grater, otherwise they will release too much water. If you don’t have a good quality grater, use knife instead.
- Pack tightly whole or sliced cucumbers into a sterilised jar.
- Now add the spices, and pour over with vinegar-water blend. The cucumbers must be completely covered with liquid. Close the jars with a lid and crew tightly.
- Place the jar into a deeper baking tray lined with a cloth. Fill the tray with water and put everything in the oven. Warm up to 100°C and wait until the cucumbers decolour and little bubbles start to appear in the jar. Turn of the oven, but leave the jar in the oven to cool down slowly, till the next day.
Cooking Tip:
Jars and lids must be sterilised before use. You can do this like this: place the jars into the preherated oven. Warm them up at 110°C for 10 minutes.
