LADY CHESTNUT - FLOUERLESS CHOCOLATE CHESTNUT CAKE 

“The cake contains everything that goes well with chestnuts: rum, cream, chocolate and a little something extra in the form of cappuccino meringue kisses.”​


IIngredients for sponge cake, ø 18 cm:
1 egg
30 g sugar
15 g corn starch
14 g dark cocoa powder
1 spoon chocolate drops
 
Ingredients for rum syrup:
3 spoons rum
60 g sugar
 
Ingredients for cream:
300 g chestnut puree
4 egg yolks
90 g sugar
375 g double cream
120g chocolate
30ml rum
2-3 gelatine leaves (or 1½ teaspoons of gelatine powder)
 
Ingredients for cappuccino meringue kisses:
3 egg whites
190 g caster sugar
2 spoons freshly squeezed lemon juice
pinch of salt
2 spoons corn starch
1 sachet of cappuccino instant coffee mix
 
For decoration:
powder cocoa
a little bit of chestnut puree
double cream

​Navodila za pripravo biskvita: 
  • Najprej si pripravimo biskvit. Ker so sestavine minimalne, predlagam, da uporabimo ožjo posodo za stepanje.
  • Jajce stepamo s 30 g sladkorja, dokler se ne speni in naraste. Nato dodamo kakav in koruzni škrob. Maso dobro premešamo in jo vlijemo v pekač obložen s papirjem za peko. Po masi razporedimo čokoladne kapljice.
  • Biskvit  pečemo na 180 stopinj, približno 10 minut. Ohladimo ga. 
  • V kozico damo 3 žlice vode in preostali sladkor. Počasi segrevamo in mešamo, da se sladkor stopi, povišamo temperaturo in kuhamo še kakšno minutko, da se malo zgosti. Odstavimo. Vmešamo rum in topel rumov preliv polijemo po ohlajenem biskvitu. 

Navodila za kremo:
  • V kozico pristavimo 30 ml vode in 90 g sladkorja. Mešamo in kuhamo tako dolgo, da se sladkor stopi, nato pa še toliko, da se zgosti, če kapljico tega sirupa kanemo v vodo. 
  • Rumenjake stepemo v kremo, ki mora nekoliko narasti. Nato počasi med stalnim stepanjem na najvišji stopnji prilivamo vroči sirup. Vse skupaj stepamo še približno 6 minut, oziroma tako dolgo, da se krema ohladi in naraste. 
  • Čokolado stopimo nad vodno kopeljo. Kostanjev pire damo v mešalnik in med stalnim mešanjem prilivamo stopljeno čokolado.
  • Liste želatine namočimo v mrzli vodi, da nabreknejo. V kozici segrejemo rum, nato pa k rumu dodamo nabreknjeno želatino in jo stopimo.
  • Smetano stepemo.
  • Rumenjakom z mešalnikom vmešamo želatino z rumom, nato pa čokoladni kostanjev pire. Na koncu z lopatko v kremo narahlo vmešamo še stepeno sladko smetano.
  • Okrog biskvita namestimo namestimo obod pekača, ter kremo nanesemo na biskvit. Postavimo v hladilnik za 4 ure ali najboljše čez noč. ​

Navodila za poljubčke:
  • Beljakom dodamo ščep soli in jih stepemo. Med stepanjem po žlicah dodajamo sladkor. Stepamo tako dolgo, dokler  beljaki ne postanejo gladki,  svetleči, svilnati. 
  • V manjšem kozarcu zmešamo sok limone, vanilijo in gustin. Mešamo, dokler se ne znebimo grudic. Mešanico na koncu vtepemo k stepenim beljakom. ​
  • Pečico segrejemo na 180 stopinj. Poljubčke nabrizgamo na papir za peko in tik preden damo poljubčke v pečico, temperaturo zmanjšamo na 150 stopinj. Poljubčke pečemo cca 10 minut - odvisno od velikosti.
  • Pečene poljubčke nikar ne trgajmo s papirja za peko, ker bodo razpadli. Pustimo jih na pekaču, da se popolnoma ohladijo. Potem jih bomo zlahka odstranili s papirja. 

Dekoracija:
  • Torto posipamo s kakavom v prahu, potrosimo s kostanjevim pirejem in polepšamo s cappuccino poljubčki.
  • Postrežemo s stepeno sladko smetano.
