"This is one of my mom’s old recipes. You can make it with baking powder or with yeast. This one is made with yeast and in my opinion tastes better."
Ingredients for dough:
300 g flour
100 g butter
3 egg yolks
3 spoons caster sugar
50 ml milk
½ fresh yeast cake (21g)
Ingredients for filling:
130 g sugar
3 egg whites
200 g grinded walnuts
3 spoons plum jam
300 g flour
100 g butter
3 egg yolks
3 spoons caster sugar
50 ml milk
½ fresh yeast cake (21g)
Ingredients for filling:
130 g sugar
3 egg whites
200 g grinded walnuts
3 spoons plum jam
Method:
- Sift the flour into a larger bowl and make a well in the middle. Pour in warm milk and crumble in the fresh yeast. At the edge of the flour, add sugar, melted butter and egg yolks.
- When starter forms, bring everything together into a compact dough. Leave it to rest for about 30 minutes, then roll it out into a quite thin, 20 cm wide strip.
- Spread plum jam on the outer sides of the strip (around 5-7 cm on each side) and roll it toward the middle.
- Beat the egg whites, gradually adding sugar, until stiff. Then gently mix in the grinded walnuts with a whisk.
- Spread the walnut mixture between the rolls.
- Bake for 20 minutes at 180°C.
- Leave it to cool down, then cut it into 1,5 cm wide slices.
