PROSEN KRAPEC

Krapci so prekmurska jed, sladica, ki jih po običaju pripravljamo na praznik vseh svetih, znajdejo se pa tudi velikokrat kar tako na mizi. Enostavna pogača, ki sede tako topla kot mrzla.

Poznamo več vrst krapcov. Vsaka gospodinja ima zagotovo svoj najboljši recept. Najpogosteje se pojavlja rižev krapec, katerega recept najdemo že med našimi recepti, potem sta pa tukaj še proseni in seveda ajdov krapec. 

Krapec, pa naj je kakršenkoli, po vrhu obložimo z orehi. ​


Sestavine za testo (običajen pekač za pečico):

300 g moke
2 dcl toplega mleka
pol kocke kvasa
1/4 žličke soli
1 žlica sladkorja
2 žlici olja
+ 1 žlica olja za namastitev

Sestavine za nadev:

1 lonček prosene kaše
2,5 lončka mleka
750 g skute
3 rumenjaki
cimet
semena vanilije
5 žlic sladkorja
1 lonček kisle smetane za premaz

Sestavine za orehov nadev:

300 g orehov
3 beljaki
ščep soli
2 žlici sladkorja

​Method: 
  • Moko vsujemo v posodo, naredimo v sredini jamico, vanjo vlijemo toplo mleko (ne vroče!!), nadrobimo kvas in dodamo  žlico sladkorja. Vse skupaj pustimo stati cca 8 minut, da se naredi kvasec. 
  • Ob strani dodamo sol, olje in omesimo mehko testo. Mesimo tako dolgo, dokler se testo ne odlepi od posode. 
  • Testo vzhajamo približno 1 uro. 
  • Proso skuhamo v rahlo slanem mleku. Pazimo, da ga ne razkuhamo. Kuhano proso mora še vedno biti okroglo. Razkuhano se namreč razcveti. Med kuhanjem proso večkrat premešamo, da se ne prismodi. 
  • Kuhano proso damo na cedilo in ga ohladimo. Mleko, ki se odcedi shranimo.
  • Vse sestavine za nadev (razen prosa) z metlico ali žlico dobro zmešamo. Nikar z mešalnikom, ker bo masa premehka.
  • Ohlajeno proso z žlico vmešamo k masi za nadev. Masa mora biti mehka, rahla. Če je presuha, ji po žlicah dodajamo zgoščeno mleko, ki je ostalo od kuhanja prosa.
  • Vzhajano testo kar z rokami, ki smo si jih naoljili, nežno razvlečemo po dnu pekača. Ob robovih naj sega testo vsaj pol cm v višino.
  • Testo obložimo z nadevom. Robove pustimo brez nadeva.
  • Kislo smetano z vilico dobro raztepemo, da se nekoliko "utekočini". Če smo sladkosnedi, smetani vmešamo žličko sladkorja.
  • Nadev premažemo s kislo smetano.
  • Krapec pečemo na 180 - 200 stopinj nekje 1 uro. 
  • Zadnjih 5 minut peke, krapec premažemo z orehovim nadevom.
  • Orehov nadev pripravimo tako, da beljake in sladkor stepemo v čvrst sneg. Snegu nato narahlo z lopatko vmešamo orehe.
  • ​Preden krapec razrežemo, ga pustimo, da se vsaj malo ohladi in nadev stisne. Posipamo ga s sladkorjem v prahu.
