Method:
- Slice the cucumbers thinly (remove the part toward the stem, which tastes bitter).
- Add finely slices onion and season well with pumpkinseed oil.
- There is no need to peel the young cucumbers, because the peel contains a vitamin E. Nevertheless, peel riper cucumbers with thicker peel.
Why are some cucumbers bitter?
- Cucumbers contains bitter compounds. Not all the same amount. The most bitter are the pickling cucumbers.
- The bitterness increases, if you damage its stem during growing period. The cucumber needs to mature faster. The faster growth results in a higher level of the bitter compounds.
- The cucumber is the most bitter at the stem, through which it gets all the nourishment. That’s why we cut of this part. The more bitter cucumber is, the larger part from the stem we cut off.
- Also, the bitterness increases, if dry periods occur to many times in the growing period – too little watering or watering with very cold water after dry and hot periods. For a good growth, the cucumbers need a constant supply of water.
